A Flavorful & No-Fuss Dinner
After a long day, the last thing you want is a kitchen full of dirty dishes. This One-Pan Baked Whole Chicken with Sweet Potatoes is the perfect solution. It’s a simple, no-fuss meal that delivers incredible flavor and comfort, all with minimal cleanup. The chicken roasts to a tender, juicy perfection, while the sweet potatoes become soft and savory, soaking up all the delicious pan juices.
This is a go-to for me on busy nights. It’s a complete meal in one pan, making it not only delicious but also incredibly practical.

My Secret to a No-Fuss Family Dinner
I’ve always believed that the most memorable meals are often the simplest. This recipe proves that point perfectly. The secret here is to season the chicken both inside and out. Rubbing the seasoning under the skin and stuffing the cavity ensures every bite is packed with flavor. The savory herbs and spices pair beautifully with the natural sweetness of the potatoes.
The best part? Everything cooks together. The sweet potatoes absorb the flavorful drippings from the chicken as it roasts, turning them into a delicious side dish with almost no extra effort. It’s a meal that feels impressive but is so easy to prepare, it almost feels like cheating.

Ingredients
Here’s what you’ll need for this recipe:
- For the Chicken and Stuffing:
- 1 whole chicken: The star of the dish, providing a lean protein source.
- 1 onion, chopped: Adds a foundational aromatic layer to the stuffing.
- 3 garlic cloves, minced: Infuses the chicken and vegetables with a robust, savory flavor.
- 2 tablespoons olive oil: Helps to brown the chicken and distributes the seasonings.
- 2 tablespoons lemon juice: Brightens the flavors and helps to tenderize the chicken.
- 1 teaspoon salt: An essential seasoning for a flavorful result.
- 1 teaspoon lemon pepper: Adds a zesty and peppery kick.
- 1 teaspoon paprika: Provides a warm color and a mild, earthy flavor.
- 1 teaspoon Italian seasoning: A classic blend of herbs for a comforting taste.
- 1 teaspoon rosemary: Its pine-like aroma pairs perfectly with chicken.
- For the Sweet Potatoes:
- 3 sweet potatoes, cubed: A delicious and nutritious vegetable that softens and sweetens as it roasts.
- Leftover seasoned onion and garlic mixture: Used to coat the sweet potatoes for a cohesive flavor.
- For Cooking:
- Chicken stock: Creates a flavorful liquid base for the sweet potatoes to cook in.
- Fresh lemon juice: A final squeeze adds a bright finish to the entire dish.
Why This Meal is a Winner
This One-Pan Baked Chicken with Sweet Potatoes is a winner because it’s a complete, well-balanced meal. It’s high in protein and nutrients, providing a wholesome dinner without a lot of fat. The one-pan nature of the dish means minimal cleanup, and the hands-off cooking time allows you to focus on other things while dinner is in the oven. It’s the perfect solution for a simple, satisfying family meal.
Can You Substitute Ingredients?
This recipe is very flexible!
- Vegetable Swap: You can use other root vegetables like carrots, parsnips, or regular potatoes in place of the sweet potatoes.
- Herb Alternatives: Feel free to swap the seasonings with your favorite blends. Thyme or oregano would also work well with chicken.
- No Whole Chicken? You can use chicken thighs or breasts. Just be sure to adjust the cooking time as they will cook much faster.
- Stock Alternative: If you don’t have chicken stock, you can use vegetable broth or even water, though the flavor won’t be as rich.

Note
Pro Dad Tips:
- Crispy Skin: For extra crispy skin, pat the chicken dry with a paper towel before seasoning.
- Doneness: The best way to check for doneness is with a meat thermometer. The internal temperature of the chicken should be 165°F (74°C).
- Rest: Always let the chicken rest for 10-15 minutes after baking to lock in the juices.
