There’s a specific kind of tired that only parents know. It’s 6 PM, the kids just walked in starving from practice, everyone’s running on fumes, and the thought of cooking dinner — plus the mountain of dishes after — feels impossible.
That’s exactly why this creamy chicken soup lives in my regular rotation. One pot. That’s the whole cleanup story. Everything happens in a single pot, which means dinner’s on the table in about an hour and I’m not staring down a sink full of dishes when we’re done. The chicken thighs get seared first until they’re deep golden brown, and all those caramelized bits stuck to the bottom of the pot? That’s free flavor — it melts straight into the soup and does half the seasoning work for you.
My boys go back for seconds every single time I make this. Every time. There’s something about a bowl of velvety soup loaded with tender shredded chicken that just hits different now that the weather’s turning and everyone’s craving real comfort food. This is the kind of dinner that makes the whole house smell incredible and gets everyone to the table without me having to call twice.
Why You’ll Love This Creamy Chicken Soup
This isn’t just another chicken soup — it’s the one-pot weeknight hero your rotation’s been missing. Searing the thighs first builds a depth of flavor you can’t get from just boiling chicken in broth. Blending the vegetables makes the soup naturally thick and silky with zero flour and zero roux. And because it’s all one pot, cleanup takes five minutes. It reheats beautifully for lunches, freezes well for those nights you don’t cook at all, and it’s the rare dinner that pleases both the kids and the grown-ups at the table.

Ingredients
For the chicken
- 3 lb boneless, skinless chicken thighs (about 10)
- 1½ tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 2 tbsp olive oil
For the soup
- 1 large yellow onion, chopped
- 3 carrots, chopped
- 3 celery stalks, chopped
- 4 garlic cloves, minced
- 2 sprigs fresh rosemary, leaves chopped
- 4 sprigs fresh thyme, leaves stripped
- 6 cups chicken broth
- 1 cup heavy cream
- Salt and pepper, to taste
To finish
- 2 tbsp fresh parsley, chopped
- Drizzle of good olive oil
- Freshly grated parmesan
- Cracked black pepper
What Each Ingredient Does
For the chicken
- Boneless, skinless chicken thighs — Thighs are more forgiving than breasts and stay juicy through searing and simmering. They shred into tender strands instead of drying out.
- Kosher salt & black pepper — The foundation. Salt pulls moisture to the surface so the sear gets that deep golden crust.
- Garlic powder & onion powder — Savory depth without any chopping. They bloom in the hot oil and coat every bite.
- Smoked paprika — Warmth, color, and a subtle smokiness. This is what gives the chicken that gorgeous amber crust.
- Dried oregano — An earthy, herbal backbone that plays perfectly with the fresh herbs later.
- Olive oil — For searing. You need the high heat to build that crust, so don’t skimp.
For the soup
- Yellow onion, carrots & celery — The classic mirepoix. They sweeten as they soften and build the soup’s entire flavor base.
- Garlic cloves — Fresh garlic goes in after the veggies soften so it turns fragrant without burning.
- Fresh rosemary & thyme — The cozy fall herbs. They make the whole pot smell like comfort and give the broth its depth.
- Chicken broth — The body of the soup. Use a good one — it carries everything.
- Heavy cream — Stirred in at the end for that velvety, rich finish. It rounds out every flavor without overpowering.
To finish
- Fresh parsley — A pop of color and fresh brightness against the rich soup.
- Good olive oil — A fruity drizzle on top. Use the good bottle here.
- Freshly grated parmesan — Salty, nutty umami that melts into the hot soup.
- Cracked black pepper — A little bite and texture to finish.
Instructions
- Season the chicken. Pat the thighs dry. Sprinkle both sides with salt, pepper, garlic powder, onion powder, smoked paprika and oregano.
- Sear it. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken and sear for 4 to 5 minutes per side, until it has a deep golden crust. It doesn’t need to be cooked through. Move it to a plate and leave all those browned bits in the pot.
- Build the base. Lower the heat to medium. Add the onion, carrots and celery and cook for 5 to 6 minutes, scraping up the browned bits, until softened. Stir in the garlic, rosemary and thyme and cook for 1 minute until fragrant.
- Add the broth. Pour in the chicken broth and stir. Put the seared chicken back in the pot.
- Simmer. Bring to a boil, cover, then lower the heat and simmer for 20 to 30 minutes, until the chicken is tender and cooked through (165°F).
- Shred it. Take the chicken out and shred it with two forks or a potato masher.
- Blend it smooth. Use an immersion blender to blend the soup until it’s completely smooth and creamy.
- Chicken back in. Stir the shredded chicken back into the soup.
- Season and add cream. Taste and season with salt and pepper. Stir in the heavy cream and warm it through without letting it boil.
- Finish it. Stir in the fresh parsley. Ladle into bowls and top with a drizzle of olive oil, grated parmesan and cracked black pepper.

Notes
- Make it lighter: use half-and-half instead of heavy cream.
- No immersion blender? Blend in batches in a regular blender, and leave the lid vent open so the steam can escape.
- Storage: keeps in the fridge for up to 4 days. Reheat gently on the stove and add a splash of broth if it has thickened.
- Freezing: freeze before adding the cream for the best texture, then stir the cream in when you reheat.
