Description

A no-flat-top method for real cheesesteak flavor, using the viral parchment-paper doner trick — beef roasted as a log on a lined sheet pan, sliced thin, mixed with roasted peppers and onions, broiled for crispy edges, and topped with provolone or cheese wiz.

Ingredients
  • 2 lbs ground beef or ground ribeye (900 g)
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 2 tbsp Worcestershire sauce
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Provolone cheese slices
  • ½ cup heavy cream (for cheese wiz, optional)
  • 1 cup American cheese (for cheese wiz, optional)
  • Hoagie/sub rolls, toasted
Instructions
  1. 1
Preheat oven to 425°F (220°C) and line a sheet pan with parchment.
  2. 2
Mix ground beef with salt, pepper, onion powder, garlic powder, and Worcestershire until fully combined.
  3. 3
Form into a tight, compact meat log and place on the sheet pan.
  4. 4
Spread chopped onions and peppers on the same pan beside the meat.
  5. 5
    Bake for 30 minutes.
  6. 6
Remove from the oven and slice the beef paper-thin.
  7. 7
Mix sliced meat with the peppers and onions on the pan.
  8. 8
Broil 3–5 minutes until the meat edges crisp and veggies caramelize.
  9. 9
Top with provolone and return to the oven just until melted.
  10. 10
Optional: Make cheese wiz by simmering heavy cream and American cheese until smooth.
  11. 11
Load into toasted rolls and pour cheese wiz over the top if using.
