One-Pot Rice and Beef

Description

A quick-to-prepare and flavorful one-pot meal with ground beef and long-grain rice, spiced with a delicious blend of smoked paprika and cardamom.

Ingredients
  • 1 pound ground beef
  • 1 cup long-grain rice
  • 1 onion, finely chopped
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon allspice
  • 1 can diced tomatoes
  • 2 cups water or beef stock

    In a large pot or Dutch oven, cook the ground beef over medium heat until thoroughly browned. Drain any excess fat from the pot.

    Add the chopped onion and diced bell pepper to the pot. Sauté for 2-3 minutes, until the vegetables begin to soften.

    Season the meat and vegetables with salt and pepper according to your taste.

    Stir in the minced garlic and grated ginger, cooking for an additional 1 minute until fragrant.

    Add the smoked paprika, ground cardamom, turmeric, and allspice to the pot. Mix well to coat the ingredients evenly and cook for 1 minute to "bloom" the spices.

    Pour in the entire can of diced tomatoes with their juice and the rice. Stir to combine everything.

    Add the 2 cups of water or beef stock to the pot, ensuring the liquid covers the rice and ingredients.
