Description

A creamy, cheesy, bacon-loaded cauliflower mash that tastes like mashed potatoes — the perfect low-carb holiday side without sacrificing comfort.

Ingredients
  • 2 lbs 2.2 cauliflower florets

  • Optional: garlic powder or onion powder

  • Green onions, for garnish
Instructions
  1. 1
Boil cauliflower florets with 1 tsp salt until soft. Drain very well.
  2. 2
Mash cauliflower with butter to evaporate excess moisture.
  3. 3
Blend cauliflower with heavy cream, ½ cup cheddar, salt, pepper, and optional garlic/onion powder until smooth.
  4. 4
    Preheat oven to 350°F (175°C).
  5. 5
Spread mash into a baking dish.
  6. 6
Top with ¾ cup cheddar + ½ cup Colby or Red Leicester if desired.
  7. 7
    Add cooked bacon on top.
  8. 8
Bake 20 minutes covered, then 10 minutes uncovered to brown the cheese.
  9. 9
Finish with chopped green onions before serving.
