An easy and delicious recipe for a seared and roasted pork tenderloin, topped with a quick homemade creamy Dijon mustard sauce.
Ingredients
For Pork Tenderloin:
1lbs 1.5 Pork tenderloin
4cloves Garlic, minced
1tbsp Fresh rosemary, finely chopped
Salt and pepper to taste
2tbsp Olive oil
For Creamy Mustard Sauce:
1/4cup Dijon mustard
1/4cup Heavy cream
1tbsp Lemon juice
Salt and pepper to taste
Optional garnish: Chopped fresh parsley
Instructions
1
Preheat your oven to 375°F (190°C).
2
Make the Rub: In a small bowl, combine the minced garlic, finely chopped rosemary, salt, and pepper to create an herb rub.
3
Prepare the Pork: Pat the pork tenderloin completely dry with a paper towel. Generously coat it with the herb rub, pressing the mixture onto the meat for even coverage.
4
Sear: Heat the olive oil in an oven-safe skillet (cast iron works great!) over medium-high heat. Once hot, sear the pork tenderloin on all sides until browned (about 2-3 minutes per side).
5
Roast: Transfer the skillet to the preheated oven and roast the tenderloin for 18-20 minutes or until it reaches an internal temperature of 145°F (63°C).
6
Make the Sauce: While the tenderloin roasts, prepare the creamy mustard sauce. In a small saucepan, combine the Dijon mustard, heavy cream, lemon juice, salt, and pepper. Heat over low heat, stirring continuously, until the sauce is heated through and well combined.
7
Rest and Serve: Once cooked, remove the pork from the oven and let it rest for a few minutes on a cutting board. Slice it into medallions.
8
Serve the garlic herb pork tenderloin medallions with a generous drizzle of the creamy mustard sauce. Garnish with chopped fresh parsley if desired.
