Ingredients
Beef
1lb ground beef
1tsp garlic powder
1tsp onion powder
1tsp seven-spice seasoning
Salt & black pepper, to taste
Vegetables
4medium sweet potatoes
1large red onion, sliced
2tbsp olive oil
Creamy Cucumber Sauce
1cup Greek yogurt
½cup cucumber, grated or finely diced
1small garlic clove, minced
1-2tbsp fresh mint, finely chopped
Juice of ½ lemon
½tsp lemon zest
Salt & black pepper, to taste
Optional Garnish
Fresh parsley, chopped
Instructions

Preheat oven to 400°F (200°C) and line a sheet pan with parchment or foil.

Mix ground beef with garlic powder, onion powder, seven-spice, salt, and pepper.

Flatten beef between parchment sheets, roll tightly into a log, and seal.

Pierce sweet potatoes with a fork and place on the pan with sliced onions.

Drizzle vegetables with olive oil and season with salt and pepper.

Add beef log to the pan and roast for 30 minutes.

Remove beef and onions; return potatoes to oven for 15–25 more minutes.

Mix all cucumber sauce ingredients until smooth.

Slice rested beef thinly.
